Passover almond cookies

Yield: 1 Batch

Measure Ingredient
1½ cup Almonds, ground
2 \N Egg whites
\N dash Salt
¾ cup Sugar
1 teaspoon Vanilla sugar

Beat whites with salt until foamy. Gradually add sugar; continue beating until peaks form. Fold in ground nuts. Drop by teaspoonsfuls on a greased cookie sheet. Bake at 350f degrees for 15 minutes. Cool for 2 minutes in pan; remove cookies to a rack and finish cooling. Source: Torah Prep High School for Girls Passover booklet.
