½teaspoonMaldon salt
15gramsFresh flat-leaf parsley; stalks discarded
4tablespoonsFreshly grated Parmesan
4tablespoonsExtra virgin olive oil
½Lemon; squeeze of
Maldon salt and freshly ground black
; pepper

Directions

Place the garlic, salt, parsley and Parmesan in a mini blender and whizz to a puree. Add the olive oil and lemon juice and blend again briefly. Season to taste, cover tightly and chill until ready to serve.
