Parsley & potato soup

Ingredients

| 1 | medium | Onion, chopped |
| 1 | teaspoon | Olive oil |
| 2 | cups | Chopped potatoes |
| 1 | cup | Sliced leeks, white only |
| 4 | cups | Stock |
| 1 | teaspoon | Salt |
| ¼ | teaspoon | White pepper |
| 2 | tablespoons | Chopped fresh chives |
| ¼ | cup | Chopped fresh parsley |
Directions
In a large pot, combine all the ingredients except the salt, pepper, chives & parsley. Cover the pot & bring to a boil. Lower heat & simmer for 30 minutes. Cool slightly, then puree. Season with salt & pepper & garnish with chives & parsley.
