Parmesan rounds

Yield: 120 Servings

Measure Ingredient
2 \N Loaves sliced; white bread or melba rounds
\N \N Butter
2 packs (8-oz.) cream cheese; room temperature
1 \N Stick melted butter
¼ cup Plus 2 tablespoons mayonnaise
6 \N Green onions; chopped
\N \N Freshly grated Parmesan

Preheat broiler. Use 1" cookie cutter and cut 3 circles from each slice of bread. Butter one side. Arrange in layer on baking sheet. Broil until lightly toasted. Turn and broil unbuttered side. Transfer to rack to cool.

Combine cream cheese, butter, mayonnaise and green onion. Spread 1 teaspoon mixture over buttered side. Dip in Parmesan cheese (May prepare to this point and freeze). Preheat broiler. Arrange rounds on baking sheet. Broil until bubbly and golden, about 5 minutes. Serve hot.
