Papaya, mango and pineapple relish

½cupPapaya; cut into small cubes
½cupMango; cut into small cubes
½cupPineapple; cut into small cubes
1tablespoonMint leaves; chopped fine
2tablespoonsCilantro; chopped fine
1tablespoonApple cider vinegar
1teaspoonExtra-virgin olive oil
4Beautiful dill leaves for decoration, (4 to 5) (optional)
Salt and pepper to taste*

Directions

Toss gently and serve with the Salmon and Scallop Cakes. (see separate recipe)
