Pancakes (gluten free)

Yield: 6 Servings

Measure Ingredient
1 cup Brown rice flour
\N \N Or oat flour -- * see note
½ cup Garbanzo flour -- ** see
\N \N Note
½ cup Cornmeal
1½ cup Water
2 tablespoons Honey
1 tablespoon Applesauce
4 teaspoons Baking powder

Combine all ingredients by hand or in a blender. Cook on a lightly oiled griddle. When tops beging to bubble and edges begin to look dry, turn over and cook on other side.

HELPFUL HINTS: Add raisins or chopped fruit to the batter, if desired. If you have a non-tsick griddle, you will not need any oil.
