| 1 | cup | All-purpose flour |
| 2 | teaspoons | Baking soda |
| 2 | cups | Orange juice |
| 2 | teaspoons | Orange zest |
| 4 | tablespoons | Unsalted butter, room temp. |
| 1 | cup | Sugar |
| 3 | mediums | Eggs, room temperature |
Directions
Spray 60 Madeleine molds with cooking spray.
In a medium mixing bowl, mix flours and baking soda together and set aside.
In a medium saucepan bring orange juice to a boil, remove pan from heat and allow to cool. In a small bowl mix orange juice and zest together and set aside.
In a large mixing bowl cream the butter and sugar together. Beat in eggs one at a time. Beat in flour mixture in thirds alternately with the orange-juice mixture.
Spoon 1 T batter into each prepared Madeleine mold, and bake in a preheated 350'F oven for 10 to 15 minutes. Makes 60.
