Orange-currant muffins - bon appetit

Ingredients

Quantity Ingredient
2 cups All purpose flour
½ cup Sugar
teaspoon Baking powder
¼ teaspoon Baking soda
Pinch of salt
1 cup Orange juice
½ cup (1 stick) unsalted butter, melted, cooled
2 larges Eggs, beaten to blend
2 tablespoons Fresh lemon juice
¼ teaspoon Lemon extract
¾ cup Dried currants
2 teaspoons Grated orange peel

Directions

Position rack in center of oven and preheat to 400'F. Line twelve ⅓-C muffin cups with paper liners. Combine first 5 ingredients in large bowl. Whisk orange juice, melted butter, eggs, lemon juice and lemon extract in medium bowl to blend. Add to dry ingredients and mix just until combined. Fold in currants and orange peel. Divide batter equally among prepared muffin cups. Bake until golden and tester inserted into center of muffins comes out clean, about 25 minutes.

Transfer muffin tin to rack and cool.
