Chocolate madeleines - house beautiful

Yield: 60 madeleines

Measure Ingredient
\N \N Cooking oil spray
5 ounces Semisweet chocolate
3 tablespoons Low-fat milk
1 cup Whole wheat pastry flour
1 cup All-purpose flour
2 teaspoons Baking soda
1½ cup Cold strong coffee
½ cup Madeira
2 tablespoons Unsalted butter
1 cup Sugar
3 mediums Eggs

Spray 60 Madeleine molds with cooking spray.

In a small saucepan melt chocolate in milk and set aside.

In a medium mixing bowl, mix together flours and baking soda and set aside.

In a small bowl mix coffee and Madeira and set aside.

In a large mixing bowl cream butter and sugar together. Add eggs one at a time, beat- ing well after each addition. Beat in flour mixture in thirds alternately with the coffee mixture.

Spoon 1 T batter into each prepared Madeleine mold, and bake in a preheated 350'F oven for 10 to 15 minutes.
