Orange ginger chicken lo mein

Ingredients

¼cupThawed orange juice concentrate
¼cupSoy sauce
2tablespoonsCornstarch
2tablespoonsBrown sugar
1tablespoonMinced garlic
½teaspoonGround ginger
¼teaspoonSalt
¼teaspoonCrushed red pepper
6cupsWater
8ouncesChinese style noodles
1tablespoonOil
1packFresh stir fry vegetables, (16 oz)
¾poundsBoneless, skinless chicken, cut into strips
1cupSliced green onions
¼cupChopped dry roasted peanuts

Directions

Combine first 9 in bowl. Boil water and add noodles. Drain and set aside.

Heat oil, add veggies and stir fry 2 minutes. Add chicken , stir fry 3 minutes or until done. Add broth mixture, cook until thick. Combine chicken mixture and noodles in large bowl - toss well. Sprinkle with peanuts. 6 servings.
