Orange baked chicken

Ingredients

Juice concentrate or;
cupOrange juice
1tablespoonOrange rind; grated
2tablespoonsSoy sauce, low sodium
1tablespoonOnion; minced
¼cupParsley, or 1 tsp dried chopped
1Cl Garlic; minced
¼teaspoonPepper
1Chicken, skinless cut in pieces

Directions

Recipe by: The New American Diet - ISBN 0-671-66375-5 Preheat oven to 400 F. Combine all ingredients except chicken. Place chicken in a 9 x 12-inch pan. Pour marinade over chicken. Cover pan (foil) and bake for 45 mins. Uncover and continue baking until tender. Baste several times with sauce. If desired, thicken remaining sauce in pan and serve as gravy.

Makes 6 servings.

(Author's Note): Very easy to prepare. Sauce is great over rice or potatoes. You may also marinate the chicken in sauce 8 hours or overnight in refrigerator.
