Ingredients

1quartChopped cabbage (1 small)
3cupsChopped cauliflower (1 md)
2cupsChopped onion
2cupsChopped green tomatoes
2cupsChopped green peppers (4 md)
1cupChopped sweet red and yellow
Bell peppers
3tablespoonsSalt
cupWhite vinegar
cupSugar, or more to taste
2teaspoonsDry mustard
1teaspoonTumeric
½teaspoonGround ginger
2teaspoonsCelery seed
1teaspoonMustard seed

Directions

LIQUID:

Combine all of the chopped ingredients, sprinkle with the 3 T. of salt, mix lightly, let stand 4-6 hours in a cool place. Drain well.

Combine the ingredients for the liquid, simmer for 10 minutes.

Add the vegetables to the hot liquid, simmer 20-25 minutes. Bring to a boil. Seal with hot, sterilized, jars and lids, leaving ¼" headspace.

Note: you can use green or ripe tomatoes.
