Nancy's tuna salad

Yield: 4 Servings

Measure Ingredient
1 can (6 oz.) water-packed tuna; drained and flaked
2 tablespoons Diced celery
2 tablespoons Chopped red bell pepper or pimiento
2 tablespoons Chopped green bell pepper
2 tablespoons Chopped onion
1 \N Hard cooked egg; chopped
2 tablespoons Chopped dill pickle
¼ cup Russian dressing
2 tablespoons Mayonnaise
\N \N Salt & ground black pepper to taste
\N \N Lettuce leaves; washed and dried
\N \N Chopped peanuts; (optional)

Combine tuna, celery, red bell pepper, green bell pepper, onion, egg, pickle, Russian dressing, mayonnaise, salt and pepper; stir well. Serve on lettuce leaves and sprinkle chopped peanuts over the top, if desired.

NOTE: Can be made in larger quantities to take to church socials, etc.
