Ingredients

| 1 | medium | Onion, chopped |
| 1 | pounds | Fresh mushrooms, thin sliced |
| 2 | tablespoons | Butter |
| Chopped parsley | ||
| Paprika | ||
| 1 | tablespoon | Lemon juice |
| 1½ | cup | Sour cream |
| 6 | slices | Canadian bacon |
| 3 | eaches | English muffins, halved and toasted |
Directions
Saute onion and mushrooms in butter until tender. Add salt, pepper, parsley paprika, lemon juice and sour cream; place over low heat until warm (do not allow to boil). Fry canadian bacon, and place over muffin halves. Spoon sauce over bacon. Serve immediately.
