Ingredients

10millilitres2 tsp olive oil
1smallOnion peeled and finely
Chopped
1Clove garlic, crushed.
150grams5 oz tomato puree
300millilitresHalf pt water
1Bay leaf
60millilitres4 tbsp chopped fresh parsley
Ten coriander seeds tied
Inside a muslin bag or
Coffee filter bag
To make a bouquet garni.
Ground black pepper.
750grams1,5 lb mushrooms thickly
Sliced

Directions

Heat the oil in a pan and gently fry the onion until soft, about 5 minutes. Add the garlic and cook for a further minute. Add the remaining ingredients except the mushrooms and simmer for 30 minutes.

Add the mushrooms and a little water if necessary then cook for a further 15 minutes. Remove the bouquet garni before serving.
