Mushroom pilau from john peel

Measure Ingredient
2 tablespoons Oil
2 Bay leaves
5 Cm cinnamon stick
4 Cardamoms
1 large Onion; finely chopped
170 grams Mushrooms; sliced
325 grams Basmati rice; washed and drained
1 teaspoon Salt
825 millilitres Water

1. Heat the oil in a large saucepan over a medium high heat. Add the bay leaves, cinnamon and cardamoms and let them sizzle for a few seconds.

2. Add the onion and fry until soft. Add the mushrooms and fry for about 5 minutes.

3. Add the rice and salt and stir fry for 2-3 minutes. Add the water and bring to the boil.

Cover tightly, reduce heat to very low and cook or about 20 minutes until all the water has been absorbed. Fluff up the pilau with a fork and then serve.
