Mushroom-chive pilaf

Ingredients

1tablespoonOlive oil
½cupMinced fresh onion
1Garlic clove; minced
2cupsLow-salt chicken broth
½teaspoonSalt
½teaspoonWhite pepper
1cupUncooked basmati rice
¼cupChopped chives
¼cupThinly sliced green onions
8ouncesMushrooms; chopped

Directions

1. Heat oil in a medium saucepan over medium-high heat. Add onion and garlic, and saute 2 minutes. Add broth, salt, and pepper. Bring to a boil; add rice. Cover, reduce heat, and simmer 35 minutes. Remove from heat; let stand 5 minutes. Stir in chives, green onions, and mushrooms.

Yield: 6 servings (serving size: 1 cup).
