Mushroom and seafood special

Ingredients

8largesOpen cup mushrooms
1teaspoonOil
8ouncesHaddock; cooked
4ouncesShrimp; peeled & cooked
2ouncesFresh bread crumbs
1teaspoonOyster sauce
1Egg yolk; beaten
3ouncesWhite cheddar cheese; grated

Directions

1. Arrange the mushrooms cap side down in a lightly oiled roasting tin.

2. Cut the haddock into small pieces and mix with the prawns, breadcrumbs, oyster sauce and egg yolk.

3. Divide the filling between the mushroom caps, sprinkle with cheese.

4. Bake in a 400 degree oven for 10 minutes or until cheese is melted and golden brown.
