200gramsGreen pork back fat or fatty
Pork belly without skin
20gramsSalt
2Level tsps finely ground
White pepper
1teaspoonThyme
1teaspoonMarjoram
5Pieces pimento
1Piece finely ground
Cinnamon

Directions

Mince pork, beef and fat through 8mm disc. Mix herbs and spices and sprinkle over meat mass and mix all together by hand for 5-10 mins.

Fit funnel to mixer and fill pork casings. Twist into length of choice.
