Mom's coffeecake

Yield: 1 Servings

Measure Ingredient
2 packs Yeast
1 cup Warm water
2 teaspoons Sugar

Mix separately ⅔ cup instant mashed potatoes with enough boiling water to be stiff enough. Add to above yeast mixture and add the following:

1 cup butter, softened 1 cup sugar 1 can Carnation milk with enough water to make 2 cups liquid, warmed 3 eggs Salt Vanilla 7 cups flour, enough to make a soft dough. Let rise. Punch down and let rise again.

Roll out ½ - ¾ inches thick and brush with melted butter.

Sprinkle over filling after mixing together 1 cup of flour 1½ cup brown and white sugar or about ½ cup syrup as part of the above

Chopped nuts. (Knowing my mother, as many as possible. Possibly 2 cups chopped pecans.)

Roll and slice about 2 ½ inches thick and place in greased round 8 inch cake pan.

Raise and cook 350 degrees for about 30 minutes.

Frost as desired.
