Measure | Ingredient |

½ cup | Brown sugar |
1 teaspoon | Salt |
1 cup | Date filling (see below) |
¾ cup | Flour |
1 \N | Egg |
1 cup | Sour milk or buttermilk |
1 tablespoon | Melted shortening |
1½ cup | Bran |
1 teaspoon | Baking soda |
1 cup | Chopped dates |
½ cup | Brown sugar |
1 cup | Hot water |
1 teaspoon | Lemon juice |
DATE FILLING
Date Filling: Mix date filling ingredients & simmer until thickened.
Preheat oven to 375øF, prepare pans. Measure sugar, egg, salt, shortening & date filling into a bowl. Beat vigorously until smooth. Add bran. Add flour & baking soda, then milk. Stir ONLY to moisten ingredients. Spoon into pans & let stand for 3 mins. Bake for 20 mins or until done. Makes 12 deliciously tasty & moist muffins. Note: Shortening may be anything you wish ie butter, margarine, oil etc.
