Honey-carrot-date muffins

Ingredients

| ¼ | cup | Butter or margarine |
| ½ | cup | Honey |
| ½ | cup | Milk |
| 2 | Eggs | |
| 1½ | cup | Flour |
| 1 | teaspoon | (heaping) baking powder |
| 1 | teaspoon | Salt |
| 1 | cup | Grated carrots |
| 1 | cup | Pitted chopped dates |
Directions
Melt butter & honey, stir in eggs & milk & beat. Combine dry ingredients & stir thoroughly. Add to wet mix until just combined, fold in carrots & dates. Bake at 375øF for 15-20 mins. Makes 10 large muffins. Delicious when heated & served with butter, cream cheese or marmalade.
