Mock chicken salad

Yield: 4 servings

Measure Ingredient
2 cups Diced cooked pork or veal
1 cup Diced celery
4 \N Ripe olives, chopped
1 \N Pimento
1 cup Boiled salad dressing
\N \N Salt and pepper

Combine meat, celery, olives, and ½ the pimento. Season to taste.

Moisten with salad dressing. Mix lightly with 2 forks. Serve on crisp lettuce. Garnish with strips of pimento. 4 servings.
