Mixed vegetable stir fry in plum sauce

500gramsBrussels sprouts; trimmed & halved
1Red capsicum; seeded and thinly
Sliced
1Clove garlic; crushed
100gramsSnow peas; trimmed
100gramsButton mushrooms; halved
¼cupShallots; sliced
1tablespoonFresh coriander; chopped
1tablespoonPlum sauce

Directions

1 . Heat oil in a wok or large frying pan. Saute brussels sprouts, capsicum and garlic for 2 minutes.
