Minute tapioca pudding

Yield: 6 servings

Measure Ingredient
1 each Egg
4 tablespoons Sugar
⅛ teaspoon Salt
2 cups Milk
3 tablespoons Minute tapioca
¾ teaspoon Vanilla

Separate egg; beat white until foamy. Add 2 T sugar gradually and beat to soft peaks. Cook and stir 2 T sugar, egg yolk, salt, milk and tapioca to full boil. Very slowly add beaten white, stirring rapidly to blend. Add vanilla. Let stand covered, for 20 minutes and stir. Serve cold or warm.
