Tapioca pudding

Ingredients

| ⅓ | cup | Tapioca |
| 1 | cup | Cold water |
| 2 | cups | Milk |
| ⅓ | cup | Sugar |
| ⅛ | teaspoon | Salt |
| ¼ | teaspoon | Vanilla |
Directions
Soak tapioca in cold water at least 4 hours; overnight if you prefer; do not drain.
Transfer to a large, heavy saucepan, add remaining ingredients except vanilla, and simmer over lowest heat, stirring now and then, 1 hour.
Off heat, mix in vanilla; serve warm or chilled.
