Pearl tapioca pudding

Yield: 8 servings

Measure Ingredient
1 cup Pearl Tapioca
1 cup Milk
3 cups Milk
1 dash Salt
5 \N Egg yolks
\N \N Grated rind of a lemon
\N \N Juice of 1/2 lemon
⅔ cup Sugar
5 \N Egg whites
\N \N Cinnamon, opt'l

Soak overnight, refrigerated the tapioca in one cup of milk. In a double boiler add the tapioca mixture, 3 more cups of milk and a dash of salt and cook 3 hours. Cool. Preheat oven to 325. Beat and add in the yolks, lemon rind and juice and sugar. Increase sugar to ¾ cup or more if desired. Beat until stiff the egg whites and fold in. Put mixture in a baking dish and bake for 20 min. Serve hot or cold with a sprinkling of cinnamon or a fruit sauce, stewed fruit and/or whipped cream. Submitted By JIM WELLER On 05-07-95
