Minty chicken and kiwi fruit salad

| 1 | tablespoon | Freshly chopped mint; up to 2 |
| Salt and freshly ground black pepper | ||
| 1 | Sprig fresh mint | |
Directions
1. Mix together the kiwi fruit, chicken, mushrooms, pepper, mayonnaise and chopped mint, with seasoning to taste.
2. Transfer to a serving dish and garnish with sprigs of fresh mint.
