Minted pear salad with cottage cheese dressing

| 1 | cup | Boiling water |
| ¼ | teaspoon | Mint extract |
| 1½ | teaspoon | Vinegar |
| ¾ | cup | Cold water |
| 2 | Fresh Bosc or Anjou pears; (2 to 3) | |
| ½ | cup | Cottage cheese |
| ¼ | cup | Milk |
| 2 | teaspoons | Sugar |
| 2 | teaspoons | Lemon juice |
| ¼ | cup | Chopped walnuts |
Directions
COTTAGE CHEESE DRESSING
Dissolve gelatin and salt in boiling water. Stir in mint extract, vinegar and cold water. Chill until very thick. Core and chop pears to measure 1-½ cups. Fold pears into gelatin. Pour into oiled 1-quart ring mold.
Chill until firm. Unmold. Serve with Cottage Cheese Dressing.
Cottage Cheese Dressing: Beat cottage cheese with milk until smooth. Add remaining ingredients and beat well. Makes ¾ cup.
Always be sure to use ripe pears.
