Minted melon

Ingredients

1Orange-fleshed melon; seeded flesh in lg. cubes
1teaspoonGrated orange rind
¼cupOrange juice
2tablespoonsSugar
cupRaspberry vinegar
¼cupFresh mint; finely chopped

Directions

Put melon cubes in serving bowl. Combine other ingredients; mix well to dissolve sugar. Pour over melon. Chill, covered, for an hour to let flavors blend.
