Minted melon

Ingredients

| 1 | Orange-fleshed melon; seeded flesh in lg. cubes | |
| 1 | teaspoon | Grated orange rind |
| ¼ | cup | Orange juice |
| 2 | tablespoons | Sugar |
| ⅓ | cup | Raspberry vinegar |
| ¼ | cup | Fresh mint; finely chopped |
Directions
Put melon cubes in serving bowl. Combine other ingredients; mix well to dissolve sugar. Pour over melon. Chill, covered, for an hour to let flavors blend.
