Mint-onion dressing

Yield: 1 2/3 cups

Measure Ingredient
1 \N Onion, finely chopped
1 large Clove garlic, minced
⅓ cup Honey
⅓ cup White wine vinegar
¼ cup Finely chopped fresh mint or 2 tbsp. dried
1 tablespoon Fresh lemon juice
½ teaspoon Dry mustard
½ teaspoon Coarse salt
½ teaspoon Fresh ground black pepper
½ cup Vegetable oil

In blender or food processor fitted with steel blade, combine all ingredients except oil. Add oil in slow steady stream through lid or feed tube.

Alternatively, beat all ingredients except oil in medium bowl, then whisk in oil. Stir well and strain. Makes 1 2/3cups. Typed in MMFormat by chartlin@... Source: Canadian Living Magazine.
