Mint patties

Yield: 8 Servings

Measure Ingredient
⅓ cup Corn syrup
¼ cup Margarine
4 cups Sifted powdered sugar
2 Drops red food coloring
1 teaspoon Peppermint extract

In a small bowl combine the corn syrup, margarine and peppermint extract Beat until well combined. Gradually add 2 cups of the powdered sugar, beating well. Add as much more sugar as you can mix in with a spoon. Turn out on to surface lightly coated with powdered sugar and knead in as much of the rest of sugar to make a stiff dough. Divide into three parts and add food coloring to each , red, green and yellow etc. Shape into ¾ inch balls and place on wax paper covered baking sheets and press down with tines of fork. Let dry for several hours.
