Yield: 84 Servings
|3⅔ cup||(1lb.) powdered sugar|
|¼ cup||Hershey's cocoa|
|⅓ cup||Butter or margarine, softened|
|⅓ cup||Light corn syrup|
|1 teaspoon||Peppermint extract|
Sift together powdered sugar and cocoa; set aside. In a large mixer bowl on medium speed with electric mixer, beat butter, corn syrup, and peppermint extract until well blended. Gradually add 1 to 2 cups cocoa mixture, beating until well blended and smooth. With a wooden spoon, stir in remaining cocoa mixture. With hands, knead until mixture is well blended and smooth. On waxed paper, pat or roll out to ¼-inch thickness. With small cookie cutters, cut into desired shapes. Or, using about 1 tsp. of chocolate mixture for each, shape into balls; flatten into patties.
Decorate as desired. Store, tightly covered, in refrigerator.
