Mini-pizza bruschetta

Ingredients

1Rustic bread loaf; sliced 1/2\" thick
6Garlic cloves -; (to 8)
cupOlive oil
1cupTraditional Italian Tomato Sauce; (see recipe)
poundsFresh buffalo mozzarella; sliced 1/4\" thick
8Fresh basil leaves; (to 12)

Directions

Heat the broiler or salamander. Heat a grill or grill pan over high heat.

Grill the bread on each side until crisp and toasted, 45 to 60 seconds per side. Rub the crusts of bread with garlic, and place on baking sheet.

Drizzle with olive oil, and spoon on about 2 tablespoons of the Traditional Italian Tomato Sauce per slice of bread. Cover with cheese. Broil until melted and bubbly, about 5 minutes. Remove and garnish with basil leaves.

Makes 8.
