Mile-high strawberry pie

Yield: 8 - 10 folks

Measure Ingredient
3 quarts Fresh strawberry; divided
1½ cup Sugar;
6 tablespoons Cornstarch;
⅔ cup Water;
1 10" deep dish pastry shell;
1 cup Alta Dena heavy cream;
1½ cup Instant vanilla pudding mix;

In a large bowl, mash enough strawberries to equal 3 cups. In a saucepan, combine sugar and cornstarch. Stir in the mashed strawberries and water; mix well. Cook and stir for 2 minutes.

Remove from heat. Pour into a large bowl. Chill 2-3 hours. In a small mixing bowl whip cream and until soft pecks form. Sprinkle pudding over cream and whip until stiff. Pipe around edge of pie or doing on individual. Serves 8 to 10.
