1tablespoonLemon juice
cupFresh strawberries; sliced and divided
¼cupSugar (I tried subst 6-7 packets of Equal)
teaspoonUnflavored gelatin
3tablespoonsCold water
¾cupFrozen strawberry daiquiri fruitjuice concentrate; thawed
3tablespoonsCornstarch
¼cupWater

Position knife blade in a food processor bowl; add 1½ cups of strawberries. Process until smooth. Toss remaining strawberries with sugar (or Equal) in a large bowl. Sprinkle gelatin over 3 T cold water in a medium saucepan; let stand 1 minute. Add pureed strawberries, fruitjuice concentrate, and lemon juice; cook over medium heat until gelatin dissolves. Combine conrstarch and ¼ cup of water, stirring until smooth; add to gelatin mixture. Cook over medium heat 2 minutes or until thickened and glossy, stirring constantly; cool slightly. Stir pureed strawberry mixture into large bowl of strawberry-sugar mixture. Sppon mixture into pie crust. Cover and chill in fridge for at least 4 hours.
