Fresh strawberry pie #2

Yield: 8 Servings

Measure Ingredient
1 \N Fat-free pie crust (I use Wonderslim fat-free pie crust)
1 tablespoon Lemon juice
7½ cup Fresh strawberries; sliced and divided
¼ cup Sugar (I tried subst 6-7 packets of Equal)
1½ teaspoon Unflavored gelatin
3 tablespoons Cold water
¾ cup Frozen strawberry daiquiri fruitjuice concentrate; thawed
3 tablespoons Cornstarch
¼ cup Water

Position knife blade in a food processor bowl; add 1½ cups of strawberries. Process until smooth. Toss remaining strawberries with sugar (or Equal) in a large bowl. Sprinkle gelatin over 3 T cold water in a medium saucepan; let stand 1 minute. Add pureed strawberries, fruitjuice concentrate, and lemon juice; cook over medium heat until gelatin dissolves. Combine conrstarch and ¼ cup of water, stirring until smooth; add to gelatin mixture. Cook over medium heat 2 minutes or until thickened and glossy, stirring constantly; cool slightly. Stir pureed strawberry mixture into large bowl of strawberry-sugar mixture. Sppon mixture into pie crust. Cover and chill in fridge for at least 4 hours.
