|1 \N||Fat-free pie crust (I use Wonderslim fat-free pie crust)|
|1 tablespoon||Lemon juice|
|7½ cup||Fresh strawberries; sliced and divided|
|¼ cup||Sugar (I tried subst 6-7 packets of Equal)|
|1½ teaspoon||Unflavored gelatin|
|3 tablespoons||Cold water|
|¾ cup||Frozen strawberry daiquiri fruitjuice concentrate; thawed|

Position knife blade in a food processor bowl; add 1½ cups of strawberries. Process until smooth. Toss remaining strawberries with sugar (or Equal) in a large bowl. Sprinkle gelatin over 3 T cold water in a medium saucepan; let stand 1 minute. Add pureed strawberries, fruitjuice concentrate, and lemon juice; cook over medium heat until gelatin dissolves. Combine conrstarch and ¼ cup of water, stirring until smooth; add to gelatin mixture. Cook over medium heat 2 minutes or until thickened and glossy, stirring constantly; cool slightly. Stir pureed strawberry mixture into large bowl of strawberry-sugar mixture. Sppon mixture into pie crust. Cover and chill in fridge for at least 4 hours.
