Melon with lavender syrup

Ingredients

| ½ | cup | Sugar |
| ½ | cup | ;Water |
| ¼ | cup | Sweet dessert wine* |
| 2 | tablespoons | Orange juice |
| ¼ | cup | Fresh or dried lavender flowers |
| 1 | large | Ripe melon, cubed |
| Fresh mint leaves | ||
Directions
GARNISH
*Sauterne, Grenache or sweet Reisling.
Bring sugar, water, wine and orange juice to a boil; reduce heat and simmer for 5 minutes, stirring once or twice to dissolve sugar. Add lavender flowers. Cover and steep for 1 to 2 hours. Strain out lavender flowers, pressing on pulp.
To serve, pour syrup over melon; gently toss. Garnish with mint leaves.
Yield: 4 to 6 servings.
