Melon salad with figs

Yield: 1 Servings

Measure Ingredient
1½ cup Plain nonfat or lowfat
Yogurt
2 tablespoons Honey
1 tablespoon Fresh lime juice
8 Fresh figs -- quartered
1 small Honeydew
Peeled, seeded & sliced into
Bite-size pcs
4 teaspoons Chopped fresh mint leaves
¼ cup Chopped walnuts or pecans

Combine the yogurt, honey & lime juice. Cover & chill until serving time.

Place 8 fig quarters in a circle in the center of 4 plates. Arrange the melon pieces around the figs. Before serving, spoon the yogurt dressing over the fruit. Sprinkle with the mint & nuts. 4 servings Posted by Vonlisa.
