Mauritian garlic sauce

Yield: 1 Servings

Measure Ingredient
1 \N Clove garlic (or more; can't have too much garlic : {]~ )
1 small Green chile
\N \N Salt to taste (at least a tablespoon)
1 \N Shot glass of water

Here's an excellent yet simple sauce that I learned from a flatmate from Mauritius. When I saw how he made it, I immediately applied Yankee ingenuity and improved upon it. I'm thinking lime juice would be a nice addition.

Using a tea cup or shot glass, crush the garlic & chile to a fine paste.

Mix well with the water & salt. It's good over oriental noodles or in a stir-fry, and mixed with plain yogurt, makes a really interesting salad dressing. Posted to CHILE-HEADS DIGEST V3 #298 by UsgeBeatha@... on Apr 18, 1997
