Marjoram-scented red bell pepper dressing

Ingredients

½Lime; juiced
cupBalsamic vinegar
1teaspoonChopped shallots
½cupOlive oil
½cupVegetable oil
3tablespoonsToasted pine nuts
1mediumRed bell pepper roasted, peeled & diced
½tablespoonMarjoram

Directions

Strain the lime juice into a large mixing bowl with the vinegar. Add shallots and slowly whisk in both oils. Add remaining ingredients and allow the herb to infuse for 10 to 15 minutes before serving.
