Red and green pepper salad

2Green peppers
1Red pepper
4ouncesCheddar cheese; grated
2tablespoonsGherkins; diced
2largesTomatoes; skinned and finely
; chopped
3tablespoonsMayonnaise
Salt and pepper
Lettuce

Directions

Cut a slice from the stalk end of the green peppers and remove the seeds.

Chop the red pepper finely. Mix with the cheese, gherkins, chopped tomatoes and mayonnaise.

Spoon the mixture into the green peppers and chill for a while. Cut the peppers into slices and arrange on a bed of lettuce.
