Marinated mushrooms #5

Yield: 3 1/2 cups

Measure Ingredient
¾ cup Vegetable oil
½ cup Heinz red wine vinegar
1½ teaspoon Salt
1 teaspoon Sugar
½ teaspoon Basil leaves, dried
¼ teaspoon Thyme, ground
1 \N Garlic clove, halved
6 \N Peppercorns
1 \N Bay leaf
1½ pounds Small mushrooms, fresh

Combine all ingredients (except mushrooms) in a large saucepan. Heat to boiling. Cover; simmer 10 minutes. Add mushrooms; simmer uncovered for 3 minutes. Transfer mushrooms and liquid into a bowl.

Cover; chill several hours or overnight, stirring occasionally.

Drain and serve as an appetizer on a relish tray. Makes about 3½ cups.
