Marinated mozzerella cheese

Ingredients

| 1½ | tablespoon | Extra virgin olive oil |
| 2 | teaspoons | Minced fresh rosemary; or 1/2 teaspoon dried rosemary |
| 1 | teaspoon | Minced fresh thyme; or 1/4 teaspoon dried thyme |
| ½ | teaspoon | Minced garlic |
| ¼ | teaspoon | Salt |
| ⅛ | teaspoon | Crushed red pepper |
| 1 | pounds | Lowfat mozzarella cheese; 3/4\" cubes |
Directions
Mix all ingredients except cheese in a medium bowl. Add cheese and stir gently to coat. Cover and refrigerate at least 24 hours or up to 5 days.
