Marinated bean & ham salad

Ingredients

4cupsCooked Idaho Beans Small Red, Great Northern or Pink Beans (or combination)
¾cupDiced green pepper
2tablespoonsChopped parsley
cupVegetable oil
½cupWine vinegar
teaspoonSugar
¾teaspoonSalt
½teaspoonGarlic powder
Freshly ground pepper to taste
cupSlivered ham
Tomato wedges
Green pepper rings

Directions

OPTIONAL

Toss beans with green pepper, celery, onion and parsley. Combine oil, vinegar, sugar, salt, garlic powder and pepper. Pour over beans; toss to combine. Cover and refrigerate several hours. Add ham at serving time. Garnish with tomato wedges and green pepper rings, if desired.

Makes 6 to 8 servings.
