Mango-glazed baked ham

Measure Ingredient
12 pounds Ham; bone in, up to 14
Salt and freshly ground pepper; to taste
3 cups Mango juice; or canned mango
; nectar
1 Piece ginger; peeled and coarsely
; chopped
1 tablespoon Honey

Preheat the oven to 375 degrees F. Trim the fat from the ham and score the fat in a diamond pattern with a sharp knife. Season lightly with salt and pepper.

Place in a shallow roasting pan and bake for 30 minutes. While the ham is baking, heat the mango juice, ginger and honey in a saucepan and reduce by half.

Remove the ham from the oven, brush some of the glaze over the entire ham, and continue baking at 325 degrees F. for another 1½ hours. Baste frequently with the remaining glaze.
