Mango and coconut milk ice

250millilitresDouble cream
250millilitresCoconut milk
6tablespoonsDesiccated coconut

Directions

Peel and stone the mangoes and puree the flesh until smooth. Whip the cream to a dropping consistency. Put the coconut milk into a bowl, add the pureed mango and mix together. Fold in the cream and coconut and freeze in an ice cream machine.

Serve with lots of fresh basil leaves scattered over the top.
