Basic blinis

Yield: 42 blini

Measure Ingredient
2 cups Milk
½ pack Yeast
2 teaspoons Sugar
3 cups Flour
3 Eggs; separated
5 tablespoons Butter; melted
½ teaspoon Salt

Scald the milk and let cool til lukewarm. Add the yeast and stir. Add the sugar and ½ the flour, mix, cover and let stand in a warm place to rise until doubled in size. Beat the egg yolks with melted butter and salt. Add to the batter. Add the rest of the flour and beat until smooth. Let rise again. Beat the egg whites until stiff and _gently_ fold into the batter. Let batter stand 10 minutes before spooning onto a hot griddle and frying. 1 Tbls portions will yield about 42 blinis or 6-7 generous portions. Submitted By JIM WELLER On 07-08-95
