Magic muffins

Yield: 1 Servings

Measure Ingredient
1¼ cup All-purpose flour
¾ cup Malt-O-Meal Quick hot cereal; dry
½ cup Sugar
¾ cup Milk
¼ cup Vegetable oil
1 Egg
1 tablespoon Baking powder
½ teaspoon Salt

Heat oven to 400°F. In a large bowl, combine all ingredients; stir together until ingredients are just moistened. Spoon into greased or paper-lined 12-cup muffin pans filling cups ¾ full. Bake for 18 to 20 minutes or until toothpick inserted in center comes out clean.

Yield: 12 muffins.

Variations:

Malt-O-Meal Maple & Brown Sugar Flavor or Apple & Cinnamon Flavor may be substituted for Malt-O-Meal Quick hot cereal. Tip: For moister muffin add ½ cup applesauce.

STREUSEL: Combine 2 tablespoons of sugar, 1 tablespoon Malt-O-Meal Quick hot cereal, dry, ¼ teaspoon cinnamon and ¼ teaspoon nutmeg. Sprinkle mixture on muffins. Bake as directed above.

BLUEBERRY: Add ½ cup blueberries to batter.

COCONUT: Add ½ cup coconut to batter.

CORN BREAD: Add 1 can (8½ ounce) cream style corn to batter. Pour into greased, 13x9-inch pan and bake for 18 to 20 minutes.

POPPY SEED: Add 1 tablespoon poppy seed to batter.

BANANA: Add ¾ cup mashed banana to batter.
