Yield: 10 servings
|1 \N||Egg -- beaten|
|4 tablespoons||Shortening -- liquid|
|3 teaspoons||Baking powder|
Mix all ingredients just until moistened; DO NOT overmix. Fill muffin cups ¾ full. Bake in preheated 400-degree oven for 20 minutes.
Variations: Add about 2 tablespoons of peanut butter, and/or chopped dried apricots, chopped prunes, or dates. I also have added 1-2 tablespoons wheat germ.
