Low-fat oatmeal muffins

Yield: 12 Servings

Measure Ingredient
1 cup All purpose flour
¼ cup Miller's bran (natural
\N \N Unprocessed bran)
¼ teaspoon Nutmeg
½ teaspoon Cinnamon
½ teaspoon Baking soda
1 tablespoon Baking powder
1 cup Oatmeal (any kind)
1 cup Unsweetened applesauce
¾ cup Nonfat milk
½ cup Raisins or any dried fruit
\N \N Cut in small pieces
1 \N Egg or 2 egg whites or 1/4 c
\N \N Egg substitute

Heat oven to 400 degrees and spray a muffin tin with cooking spray.

In a bowl, mix first six ingredients and dump out on a paper plate.

In the same bowl, mix the remaining ingredients and let sit for 5 minutes. Stir in previously mixed dry ingredients just until completely mixed. Fill muffin cups almost full. Bake for 20 to 22 minutes or until a toothpick inserted in a muffin comes out clean.

Remove muffins from pan and cool on a wire rack.
