|1 cup||All purpose flour|
|¼ cup||Miller's bran (natural|
|\N \N||Unprocessed bran)|
|½ teaspoon||Baking soda|
|1 tablespoon||Baking powder|
|1 cup||Oatmeal (any kind)|
|1 cup||Unsweetened applesauce|
|¾ cup||Nonfat milk|
|½ cup||Raisins or any dried fruit|
|\N \N||Cut in small pieces|
|1 \N||Egg or 2 egg whites or 1/4 c|
|\N \N||Egg substitute|
Heat oven to 400 degrees and spray a muffin tin with cooking spray.
In a bowl, mix first six ingredients and dump out on a paper plate.
In the same bowl, mix the remaining ingredients and let sit for 5 minutes. Stir in previously mixed dry ingredients just until completely mixed. Fill muffin cups almost full. Bake for 20 to 22 minutes or until a toothpick inserted in a muffin comes out clean.
Remove muffins from pan and cool on a wire rack.
